Kickin' chicken - a recipe to give a kick to roast chicken

The first Sunday roast at home after our holidays and I want something with bags of flavour...not sure why but I always want to eat spicy foods when I get home...and beans on toast..why I don't know!

I love roast chicken for a roast dinner and normally a plain old free range bird roasted in the oven will do for me, but this week I really wanted something with more of a kick to it...so here is my recipe, which I have called 'Kickin' chicken. Its super easy and super tasty...and no free range hens were harmed when kickin' this chicken.

"Dish of the month' - September - Nigel Slaters autumn chutney

Well folks here we are in September...its been a fabulous summer, but that autumn nip is starting to appear and the nights are drawing in :-(. However, do not fret we have Kitchen Diaires II to browse through and ponder some delicious recipes from the lovely Nigel Slater.

I made this recipe after a bit of good fortune when my next door neighbour gave us some lovely home grown green beans, as she has an abundance of them at the moment. in her garden I am not a lover of green beans but wanted to use them fresh from picking...at the same time I was considering my dish of the month for September and saw in Kitchen Diaries II a recipe for an autumn chutney. The rest,as they say, is history...

1. Prepare and slice your fresh green beans...

2. Add to your pan of ingredients (onions, mustard powder, mustard seeds, grain mustard, vinegar, sugar, spices, tomatoes etc etc)...

3. And cook along nicely...

4. Pot into sterilised jars...and there you have a lovely fresh crunchy mustard pickle...delicious!
